This sugar free cake recipe is warm, moist, and naturally sweetened with applesauce and raisins. Made without refined sugar, it’s diabetic-friendly and filled with spices like cinnamon and nutmeg. A healthy take on traditional spice cake, with rich flavor and no compromise.

Ingredients

3 cups water

2 cups raisins

1 cup unsweetened applesauce

¾ cup vegetable oil

2 large eggs

3 tablespoons liquid sweetener

1 teaspoon vanilla extract

2 cups all-purpose flour

1½ teaspoons ground cinnamon

1 teaspoon baking soda

½ teaspoon ground nutmeg

½ teaspoon salt

1 cup chopped walnuts

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Grease and flour a 10-inch Bundt or tube pan.
  2. Step 2: Simmer water and raisins over medium heat until water is absorbed. Let cool.
  3. Step 3: In a large bowl, mix applesauce, oil, eggs, liquid sweetener, and vanilla until well combined.Mixing thick sugar free cake batter with raisins and nuts
  4. Step 4: Sift in flour, cinnamon, baking soda, nutmeg, and salt. Stir until just combined.
  5. Step 5: Fold in cooled raisins and chopped walnuts.
  6. Step 6: Pour into prepared pan and smooth the top.
  7. Step 7: Bake for about 1 hour, until a toothpick inserted comes out clean.
  8. Step 8: Cool 10–15 mins in the pan, then transfer to wire rack.

Notes

Store at room temperature 2–3 days or refrigerate for 5 days.

Freeze individual slices up to 2 months. Warm gently before serving.

Add orange zest or sugar-free glaze for variation.
