Ingredients
2 medium ripe bananas, mashed
1 cup low-fat cottage cheese
2 eggs
2 tbsp granulated monk fruit sweetener (or stevia)
1 tsp vanilla extract
1 1/2 cups oat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp sea salt
1/4 cup chopped walnuts (optional)
2 tbsp sugar-free dark chocolate chips (optional)
Instructions
1. Preheat the oven to 350°F and line a loaf pan with parchment paper.
2. In a large bowl, mix the mashed bananas, cottage cheese, eggs, sweetener, and vanilla until smooth.
3. Add the oat flour, baking soda, baking powder, cinnamon, and sea salt. Stir until just combined.
4. Fold in walnuts and chocolate chips, if using.
5. Pour the batter into the prepared loaf pan and spread it evenly.
6. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Stick to one slice per serving for balanced blood sugar.
Pairs well with Greek yogurt or almond butter.
Freezes well in pre-sliced portions wrapped in parchment and foil.
